Almond Pesto

We don’t do anything special or out of the ordinary with our pesto, but we have had so many requests for the recipe we thought we better put it up!


Pesto is the best as you can use whatever you have on hand in our below recipe we use almonds but you can use any type of nut, pine nut is the traditional ingredient but we have made it before with walnuts, cashews and even macadamias.


1 big bunch (roughly 3.5 cups) fresh basil
½ cup toasted almonds
½ cup Extra Virgin Olive Oil
2 cloves of garlic
½ cup fresh grated parmesan
Pepper to season


Step 1: Place basil, almonds, garlic and cheese in the food processor. Process until the mixture starts to come together.


Step 2: With the motor running slowly drizzle in the oil and process until it reaches the consistency you like. Season with pepper.

Step 3: Store in glass jars with a drizzle of olive oil in the fridge. You can also freeze the pesto. Or serve straight away with pasta, meats, salads, fish or whatever your heart desires.
