Kate’s Plumble (aka Plum Crumble)

This recipe for plum crumble (or “plumble” as it’s known in our house) is a great way to use those summer fruits. Hint: It also makes a delicious next day breakfast, served cold with some vanilla bean yogurt.

 

Ingredients

  • 125 g flour
  • 75 g ground almonds
  • 185 g brown sugar
  • 100 g rolled oats
  • 100 g almonds, chopped or flaked
  • 1 tsp mixed spice
  • 1 tsp ground cinnamon
  • 125 g butter, melted
  • 1kg plums (deseeded and quartered)
  • 1tbs cornflour
  • 1/3 cup honey

Method

Step One: Preheat oven to 180 degrees (FF). Place all the dry ingredients in a large mixing bowl and combine. Add the melted butter and mix with a wooden spoon until combined.

Step Two: Place plums, honey and cornflour in baking dish and combine.

Step Three: Place crumble on top and place in oven for 50-60 minutes.

Step Four: Remove and serve with ice cream.
