Creamy Pumpkin Basil Pasta

Serves 2-3

This is a recipe I adapted from Cookie and Kate. It’s such a great easy dinner when you feel like a warm, comforting bowl of pasta.


227g pasta (we used spaghetti but any would work)
1 tablespoon butter
1 tablespoon flour
2 garlic cloves, chopped finely
1 handful basil (plus extra for serving)
2 cups milk
1 cup cheese (your choice again, we used parmesan and tasty)
1 cup pumpkin puree
Extra Parmesan cheese to serve


Step 1: Cook pasta in a pot of boiling salted water.

Step 2: Melt butter in medium saucepan. When melted, add in flour and stir for 3-4 minutes to cook flour through.

Step 3: Add garlic and stir to combine.

Step 4: Stir in milk and basil. Continue to stir until mixture slightly thickens and begins to bubble (this took 7-8 minutes for me).

Step 5: Stir in all that delicious cheese and pumpkin. The mixture at this stage should thicken up. Add cooked pasta and pepper to pan and toss to combine.

Serve, adding some fresh basil and parmesan if you wish.
