Monólogo Mexicano

We’re talking all things Méjico today with a quick and easy recipe for delicious Mexican ready in a flash (for whenever you get a craving!).

Mexican food scared the flip out of me when I was in the depths of my eating disorder. I remember thinking “That’s it! I am never going to be able to eat Mexican again”. Seriously, what a depressing thought!


I’m glad to report that I was entirely wrong. Nowadays, Mexican features regularly on our menu. We eat it when we’re out or cook it at home (the best option if you want to be sure there is copious amounts of cheese and sour cream available). We enjoy it fully, in all its goodness, and (shock horror) it hasn’t sent me to an early grave!

This Mexican mince recipe is such an easy mid-week dinner and you can make it with ingredients you probably have lying around in the pantry. You can serve it with corn chips, jacket potatoes, rice or homemade tortillas like we did.

Serves: I’m starting to feel like Kylie on this one because what the hell is a serving anyway! But if I were to guesstimate, I’d say this would feed around 4 people but could also serve 2-3 hungry people. So you do you and eat however much you feel.


1 Brown onion
500g beef mince
2 garlic cloves
½ tsp chilli flakes
1 tbs ground cumin
3 tsp ground coriander
1 tsp smoked paprika
¼ cup tomato paste
½ cup salsa


1.Heat a tsp of oil in a pan and cook onion and garlic until soft add mince and cook until brown
2. Add in spices and cook for 2-3 minutes until fragrant
3. Stir in tomato paste and salsa and simmer for 10 minutes
4. Serve with your choice of carb, guacamole, cheese, sour cream and salad20170506_190547.jpg

Note: You could easily add in a tin of kidney beans to bulk this up a bit more.

      Not sure really! The ED doesn’t really ever make sense to be honest. It probably didn’t help that a lot of the media are constantly pushing the idea that it’s not healthy I would say. I can say I am very happy its back in my life haha 🙂
